 How to Make Korean Noodles (Janchi Gooksoo)

What kind of Korean foods do you know? Kimchi? Bibimbap? Bulgogi? I’d like to introduce a Korean noodle dish called ‘Janchi Gooksoo’. It’s easy to cook and will please your palate. To my knowledge, my wife is the best chef for that food. I will give all of you a secret recipe that I have received from my wife, so you can make a delicious noodle dish in just a few easy steps.
The first step in making the noodles is gathering the ingredients. The step of gathering ingredients is important because it determines the overall taste of the noodle dish. The required ingredients are as follows: thin wheat noodles, anchovies, 1/4 onion, one tablespoon of soy sauce, toasted sesame seeds, powdered red pepper, a hint of crushed garlic, 1/2 teaspoon of sesame oil, chopped green onion, chopped kimchi, and an egg. Don’t worry about how to get these ingredients. You can get all of this stuff at the Asian market called Sunrise Market located on west 29th Ave. in Eugene.
After gathering the ingredients, the next step is to cook using these ingredients. To begin with, you have to prepare the noodle broth. Boil water with the anchovies and 1/4 onion for 10 minutes. After boiling, add some soy sauce and reserve the liquid removing the onion and anchovies. This liquid is the noodle broth and we call itdashi’ in Korean.

 While preparing dashi, you should make a sauce called ‘Yangnyumjang’ in Korean. You can make Yangnyumjang by mixing one tablespoon of soy sauce, toasted sesame seeds, 1/2 teaspoon of sesame oil, a hint of crushed garlic, chopped green onion, and powdered red pepper. Season it with salt, if needed.

After making the Yangnyumjang, boil the thin wheat noodles lightly. They don’t need as much time as Italian style pasta. After that, take out the boiled wheat noodles from the pot, cool them with cold water, and drain.

The last step is to garnish the noodle dish. Serve the boiled wheat noodles in an individual bowl and pour hot dashi over the noodles. Next, put the egg that is fried and sliced into thin strips, the chopped kimchi, and Yangnyumjang. According to your taste, you can sprinkle some pieces of Korean seaweed on top. Now, everything’s all set.

It’s simple to cook a Korean noodle dish called Janchi Gooksoo. Because there is no meat, this dish is perfect for vegetarians. I assure you that Janchi Gooksoo will tempt your jaded palate.
